Pumpkin Mix:
For a great gift, package this mix with a can of pumkin.

3 c whole wheat pastry flour
1 c quick oats
1 1/2 C brown sugar
2 t baking soda
1 t cinnamon
1 t nutmeg
1/2 t ginger
1/4 t cloves
1 t sea salt
1 C butterscotch chips (optional)
1 C chopped pecans (optional)

Mix all and store in a gallon ziplock bag or 2 quart jars.
For cookies: Mix 1 cup softened butter, 1 t maple flavoring, 1 15 oz can of pumpkin and 2 eggs. Add pumpkin mix, and mix just until combined. Drop by teaspoonful onto greased cookie sheets and bake at 350 for 12-15 minutes. Makes 5 dozen cookies.

For muffins: Mix 1/2 C butter or yogurt, 4 eggs, 1 t maple flavoring, and 1 15 oz can pumpkin. Add pumpkin mix alternating with 1 C milk. Fill greased muffin cups nearly full and bake at 400 for 15-20 minutes. Or until a toothpick inserted in the middle comes out clean. Makes 2 dozen muffins.

Pancake Mix
I like to make up a months worth of pancake mix into separate ziplock baggies.

2 1/4 C whole wheat pastry flour
1 T sugar
4 t baking powder
1/2 t salt
1/4 C powdered milk

Pour mix into a large mixing bowl. Add 3 eggs, 2 T oil, and 1 3/4-2 C water. (Vary the water depending on how thick you like your batter) Pour 1/4 cup on a hot skillet and turn when bubbles form around the edges. Makes 16 pancakes.

Syrup ideas: I like to mix 1 C 100% juice with 2 t stevia and 1 T cornstarch. Cook and stir until thickened and serve warm. You can store this in the fridge, but it will look lumpy when it cools. Just reheat and stir to serve again.

My children also like these pancakes with vanilla yogurt and fresh berries when they are in season.

Cinnamon-Nutmeg Syrup
For a gift mix, combine the first 4 ingredients.

1 C sugar
3 T flour
1 t cinnamon
1/2 t nutmeg
2 C water
1 t vanilla extract (or maple)
2 T butter

In a large saucepan combine all but extract and butter. Simmer stirring with a whisk until thickened. Remove from heat and whisk in vanilla and butter. You can refrigerate and reheat it. This has less sugar than store syrup.

Alfredo Sauce Mix
1 T flour
1 T powdered skim milk
1/4 t basil
1/2 t lemon pepper
1/4 t garlic powder
1/2 t salt
1/4 C parmesean cheese

To prepare mix: Add mix to 1 C milk. Cook and stir over med-high heat until sauce thickens and begins to bubble. Pour over 8 oz of pasta prepared according to package directions.
For main dishes try these mix ins: cooked shrimp and peas; chicken breast strips cooked in lemon pepper and chopped broccoli; pan cooked smoked sausage, fresh mushrooms and onions.

******************************************************** Taco Seasoning
1 t cornstarch
2 t garlic salt and pepper (or 1 t salt, 1/2 t dried minced garlic, 1/4 t pepper, and 1/4 t parsley)
2 t cumin
2 t chili powder
1 T onion flakes
1/2 t Mexican oregano

Mix together 1 pound browned and drained ground beef, 1/4 cup water and mix. Cook and stirr until hot and bubbly.
